Ingredients

  • 1 bunch cilantro
  • 1 bulb garlic
  • 1 Onion
  • 1 green pepper
  • 2-3 mini multi-color peppers

Instructions

  • Start by chopping your vegetables into manageable pieces. No need to get too fancy here, the blender will handle the hard work. The garlic cloves can go in whole, no mincing required!
  • Use a blender or food processor to pulse the ingredients. If your blender is small, work in batches, layering the vegetables to ensure even blending.
  • You’re aiming for a puree texture, not fully liquefied, but smooth enough to blend into your dishes effortlessly.
  • This recipe yields about two 12-ounce jars of sofrito. Store it in the refrigerator, where it will stay fresh for a week. Want to make a larger batch? Freeze the extra! Pour it into ice cube trays or Ziploc bags for easy use later.
