This dish is traditionally cooked over the stove. However, today I’m going to show you how to effortlessly recreate this Pollo Guisado using the Instant Pot.

Pollo Guisado is a beloved dish in many Puerto Rican households. It’s often served with rice, yellow rice, tostones (fried plantains), or a fresh slice of avocado. Its popularity stems from its versatility, affordability, and, most importantly, its mouthwatering taste. The tender chicken, sofrito, and a flavorful tomato-based sauce makes it a comforting and satisfying meal for any occasion.

Pollo Guisado Recipe

Equipment
- 1 Instant Pot
- 1 Bowl
Ingredients
- 6 Chicken Drumsticks or Thighs
- 1 Cup Water
- 2 tbs White Vinegar
- 1 tbsp Oil Olive or Vegetable
- dash Black Pepper
- 1/4 tsp Oregano
- 1 tbsp Adobo
- 2-3 cloves Garlic minced
- 1 cup Carrots (baby or diced)
- 2-3 Medium Sized Potatoes peeled & diced
- 1 Onion diced
- 2 tbsp Sofrito
- 1 8oz can Tomato Sauce
- 1 Pck Sazon Optional
Instructions
- Place chicken drumsticks in a bowl and add vinegar, pepper, adobo and oregano. (add Sazon if using it) Mix everything well and let marinate for 15-20 minutes.
- Cut all of your vegetables while the chicken marinades.
- Set your Instant Pot to sautรฉ mode and heat the olive oil.
- Add the chicken pieces to the pot and brown them on all sides, about 3-4 minutes per side.
- Once the chicken is browned remove it from the Instant Pot.
- Sautee onions and add sofrito to deglaze the pot.
- Add the tomato sauce and water and mix well.
- Add remaining vegetables and chicken to the pot
- Close the lid of the Instant Pot and set the vent to the sealing position. Cook on high pressure for 8 minutes. (cook for 10 for softer meat)
- Once the cooking time is complete, manually release remaining pressure.
- Carefully open the lid of the Instant Pot and give the Pollo Guisado a good stir. Taste and adjust seasoning if necessary.
- Serve the Pollo Guisado hot, garnished with olives, capers, or fresh cilantro if desired. Enjoy with white or yellow rice, and your favorite side dishes.
