Is there anything better than and nice hot, steamy bowl of hot soup or stew during these chilly snowy winter months? My favorite is a nice bowl of Puerto Rican Sancocho! It’s the best thing to make you feel all warm and cozy inside. What’s even better is that this Puerto Rican Sancocho recipe is for the Instant Pot.
What is Puerto Rican Sancocho?
I Puerto Rican Sancocho is simply a hearty stew (others call it a hearty soup) made with meat, sofrito and root vegetables and usually is cooked slowly on the stove in a pot for a while . HOWEVER, I have created a recipe that will teach you how to make this traditional Puerto Rican sancocho in the Instant Pot! Yes, you read that right my friend, you can make this amazing dish in a fraction of the time and still get the same mouth watering results.
What if I don’t know what root vegetables are or how to pick them out?
Well that’s no problem at all! Where I live I don’t always have access to good quality roots, so opt for buying the Goya frozen root vegetables that can be found in the frozen section of you local Walmart! A small bag of frozen casava and a bag of the tropical roots vegetable mix will do the job just fine.
Why would I want to make my Puerto Rican Sancocho in the Instant Pot?
Well for staters it’s done in a fraction of the time! Which to me is HUGE as a working mom. Secondly, you can just toss it in a pot and not have to worry keeping track of time, because that machine already keeps track of it! Lastly, all your veggies and meat will turn out equally soft and tender!
So, How can I make this Sancocho at home?

Sancocho Instant Pot Recipe

Equipment
- 1 Instant Pot
Ingredients
- 1 bag Goya Tropical Vegetables Mix
- 1 bag Goya Yucca (Casava)
- 2 cobs corn (sliced into 3 rounds)
- 1/2 cup butternut squash
- 2 Pealed and diced Potato
- 2 lbs Stew Meat
- 2 tbsp Adobo
- 2 tbsp Sofrito
- 1/4 cup cilantro
- 3 cloves garlic
- 1 tsp Oregano or Italian seasoning
- 1 tsp turmeric
- 1 tbsp Onion Powder
- 1 pck Goya Beef Bullion
- 1 tbsp Olive oil
- 5-6 cups water
Instructions
- Dice meat if needed & add 2 tsp adobo, 1 tbsp sofrito and mix.
- Set Instant pot in Saute Mode.
- Add oil to the pot
- Add meat to Instant Pot and brown
- Add the 5 cups of water
- Add beef bullion, garlic, onion powder, turmeric, oregano. Italian seasoning remaining sofrito, and mix very well.
- Place sealed lid on Instant Pot
- Cancel Saute Mode
- Set on High Pressure for 20 minutes.
- Let it do a natural release for 5 minutes, then manually release remaining pressure
- Open instant pot and give it a taste. Add adobo to your taste (I like to add an additional teaspoon or two)
- Add all remaining ingredients to the pot and mix well
- Place sealed lid back on the Instant Pot and Cook on High pressure for 5 Minutes.
- Manually release pressure
- Serve with a side of white rice and a sliver of avocado or tostones.
- Enjoy!
