Easy Crock Pot Chili Recipe

This Easy Crock Pot or (Instant Pot) Recipe is one of my family's Sunday favorites. It is very easy to make and packed with amazing flavor. I've of course infused it with some of my favorite Puerto Rican ingredients, sofrito and Adobo!

Equipment

  • 1 Slow cooker or Instant Pot (slow cooker mode)
  • 1 mixing spoon
  • 1 pan To brown meat if using a traditional slow cooker. If using the Instant Pot, Meat can be brown on Saute mode.

Ingredients

  • 1 lb Ground Meat
  • 1 can Petite Diced Tomatoes
  • 1 8oz Can Tomato Sauce
  • 2 cans Chili Beans
  • 1 Diced Onion
  • 1/4 cup Fresh Cilantro
  • 2 tbs Chili Powder
  • 1 tsp Adobo
  • 2 tsp Brown Sugar
  • 2 tbsp Sofrito

Instructions

  • Add meat, adobo, sofrito, and onion in a pan a brown the meat along with the veggies and mix well.
    I will be using my Instant Pot so I will be browning my meat on Saute mode in my Instant Pot.
  • Once meat is done browning, place meat in slow cooker and add all of the remaining ingredients.
    If using Instant t simply add all remaining ingredients to the pot and mix well.
  • Mix everything very well, place lid on slow cooker, and cook on low for 6 hours.
    If using Instant pot, cancel Saute mode, place lid on the pot, and set Instant Pot on slow cooker mode for 6 hours.

Notes

  • This can be done in both a slow cooker or Instant Pot using slow cooker mode.
  • You can serve this with some delicious corn bread (our favorite), rice, or side salad.
  • Top chili with shredded cheese, chopped cilantro, diced avocado, sour cream,
  • Save leftovers in the fridge up to 2-3 days.
