Taco Soup Slow Cooker Recipe

Taco Soup Slow Cooker

Equipment

  • 1 slow cooker or Inatant Pot using Slow cooker mode.
  • 1 mixing spoon

Ingredients

  • 1 lbs lean ground meat
  • 1 can corn drained
  • 1 can chili beans
  • 1 can black beans
  • 1 can diced tomatoes
  • 1 can 8 oz tomato sauce
  • 1 packet taco seasoning
  • 1 diced onion
  • 2 tbs sofrito
  • 1/4 cup fresh cilantro
  • 2 cloves minced garlic
  • 1/2-1 tsp Adobo to taste
  • 1/2 cup water

Instructions

  • Add ground meat, sofrito, Adobo and onion into a pan and cook until meat is browned. If using Instant Pot, brown the meat on Saute mode.
  • Add the browned meat into the slow cooker. If using Instant Pot simply cancel Saute mode.
  • Add all remaining ingredients to the slow cooker or Instant Pot and mix everything very well.
  • Cook on low for 4-6 hours. If using Instant Pot, place on Slow Cooker Mode for 4-6 hours.
  • Serve and enjoy!

Notes

  • If you would like your taco soup to be spicy try adding some hot peppers or chili powder.
  • Feel free to add sweet peppers if your family likes them.
  • Top with sour cream, cheese, or avocado.
  • Serve with a side of white rice or tortilla chips.
  • Store left overs in the fridge for up to 3 days.
