Today, I will be sharing with you another one of my family’s Slow Cooker Sunday favorites, my Taco Soup slow cooker recipe.
As I mentioned in my previous post (read here) we call Sundays Slow Cooker Sundays in my home. This is because I always make a slow cooker meal on Sundays. Our church services on Sundays are at 3 in the afternoon. Therefore our services typically end around dinner time. Who wants to come home and cook a meal after receiving some spiritual food? Not I! So, I typically put my food to cook in the morning in a slow cooker (now my Instant Pot in Slow Cooker mode ) and by the time we are out of our church service, dinner is already made at home and it’s simply waiting for us to come and enjoy it.

What’s so great about this Taco Soup slow cooker Recipe?
The simplicity, comfort, and amazing flavor of this Taco Soup makes it a winner every time! Just like my Chili (shared recipe in the last post), this is made at least once and sometimes twice a month.
What makes this so great is that it takes very little effort and prep time to make it! The only thing that requires any effort is browning the meat and turning on the slow cooker! Then, you just simply dump everything in, walk away, and let the slow cooker do the hard part. 😅
As a busy mom, who homeschools and works a full time job, efficiency and simplicity have become my best of friends 😂 Which is why it makes this recipe so amazing! Also, second day taco soup is the bomb! The flavors just become so delicious! I typically pack some for myself for lunch, and my husband and kids will enjoy the rest for lunch too.
Taco Soup Slow Cooker Recipe

Equipment
- 1 slow cooker or Inatant Pot using Slow cooker mode.
- 1 mixing spoon
Ingredients
- 1 lbs lean ground meat
- 1 can corn drained
- 1 can chili beans
- 1 can black beans
- 1 can diced tomatoes
- 1 can 8 oz tomato sauce
- 1 packet taco seasoning
- 1 diced onion
- 2 tbs sofrito
- 1/4 cup fresh cilantro
- 2 cloves minced garlic
- 1/2-1 tsp Adobo to taste
- 1/2 cup water
Instructions
- Add ground meat, sofrito, Adobo and onion into a pan and cook until meat is browned. If using Instant Pot, brown the meat on Saute mode.
- Add the browned meat into the slow cooker. If using Instant Pot simply cancel Saute mode.
- Add all remaining ingredients to the slow cooker or Instant Pot and mix everything very well.
- Cook on low for 4-6 hours. If using Instant Pot, place on Slow Cooker Mode for 4-6 hours.
- Serve and enjoy!
Notes
- If you would like your taco soup to be spicy try adding some hot peppers or chili powder.
- Feel free to add sweet peppers if your family likes them.
- Top with sour cream, cheese, or avocado.
- Serve with a side of white rice or tortilla chips.
- Store left overs in the fridge for up to 3 days.
